Biscuit making at Jill's house

Venue: Jill's house

Jill will be having open house on the boxing day (26th Dec), so she needs people
to help her on making some Christmas biscuit for the guests. I offered to help
her. However, i did not go there alone. Instead, i brought a assistant
(my husband)...hahahahahaa......He did very well in making biscuit and Jill gave
him compliment too. We tasted the biscuit and it was very delicious.

How to make Christmas biscuit?

Ingredients :

For Biscuits :
a) 170g flour 60g cold butter , cut into small pieces
b) 85g brown sugar
c) 2 tablespoons sugar cane syrup, or golden syrup
d) 2 tablespoons milk 1 egg yolk
e) 1/5 teaspoon powdered ginger
f) ½ teaspoon cinnamon
g) ½ teaspoon mixed spice


For Icing :
a) 170g sieved icing sugar
b) 1 egg white Food colouring if desired

Instructions:
a) Preheat oven to 350°F (180°C).
b) Mix flour, ginger, cinnamon and spices together in a large bowl.
c) Add the butter and rub in thoroughly with fingers until mixture has consistency
of breadcrumbs.
d) Add brown sugar.
e) In another bowl, mix syrup, milk and egg yolk and add to mixture.
f) Stir until you have a smooth paste.
g) On a floured work surface, knead pastry for a few minutes, then roll out to a
thickness of 5mm and cut into shapes with a Christmas biscuit-cutter.
h) Place on a baking tray and chill for 10 minutes.
i) Bake at a medium heat for 1à or 12 minutes, until biscuits are golden.
j) Leave to cool and place briefly under grill.

Make icing :
a) Add the icing sugar little by little to the egg white, in a small bowl, add food
colouring.
b) Ice biscuits with a piping bag.
c) Decorate.
